Hi Jimmi,
Configure your status profile in customization where the user status Completed is set as the last step, As per your first post you plan to set the status from released to cancelled but it is setting it at completed.
I am attaching a screen shot of a status profile.In your case insert the step Cancelled between Released and Completed, your issue would be resolved, also ensure that the User Status Completed is the last step in the status profile which would help to set the other preceding statuses( in this case Released, Customer Action, In Process and Open) in the document.
By setting the status profile as I explained you will see all the statuses in the document also note if you keep the user status completed as the last step then you need not remove FINI to it.
